Actually its more around 180 degrees, depends on the inclination of the target orbit. 360 degrees would make no sense. The "Pilots" usually dont fly the shuttle manually (they could do it in an emergency), the flight computers do that. And yes, this is 100% real footage of the STS-112 launch.

IF you look at any other vids of space shuttles taking off, they all do a 360 degree turn while going up. It's logical you can't see anyone driving the space shuttle, because the pilots are in the orbiter (spaceplane) aka the small plane-like thingy and the camera is at such an angle, you can't see through the windows. Not everything on youtube is fake.
